Heavenly Cherry Cheesecake Cake Roll

Ingredients

  • 3 large eggs
  • 1 cup cake flour
  • 1 can cherry pie filling
  • 1 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and granulated sugar together until light and fluffy.
  3. Gradually fold in the cake flour and vanilla extract until just combined.
  4. Pour the batter onto the prepared baking sheet and spread evenly.
  5. Bake for 12-15 minutes, or until lightly golden and springy to touch.
  6. Once baked, remove from the oven and let cool for a few minutes before transferring to a clean kitchen towel dusted with powdered sugar.
  7. Roll the cake with the towel, starting from the short end, and let it cool completely.
  8. In another bowl, beat the cream cheese and powdered sugar until smooth.
  9. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  10. Unroll the cooled cake, spread an even layer of the cream cheese mixture, and add the cherry pie filling on top.
  11. Carefully re-roll the cake without the towel.
  12. Dust with additional powdered sugar, slice, and serve.

Notes

Store in the refrigerator for up to three days or freeze for longer storage. Dusting with powdered sugar prevents sticking. Experiment with fruit fillings for variety.
