- 2 Chicken breasts
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 Garlic cloves, minced
- 1 tsp Oregano
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 cup Rice or quinoa
- 1 Cucumber, chopped
- 1 Tomato, chopped
- 1 Red onion, chopped
- 1/2 cup Feta cheese, crumbled
- 1/4 cup Olives, sliced
- 1/2 cup Tzatziki sauce
- Fresh Parsley, for garnish
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate chicken breasts in this mixture for at least 30 minutes.
- Grill the marinated chicken until cooked through, about 6-7 minutes per side. Let it rest before slicing.
- Cook rice or quinoa according to package instructions.
- Chop the cucumber, tomato, and red onion.
- To assemble the bowls, place a scoop of rice or quinoa at the bottom, then sliced chicken, and top with cucumbers, tomatoes, onions, feta, and olives.
- Drizzle with tzatziki sauce and garnish with parsley before serving.
Notes
Marinate the chicken for at least 30 minutes for better flavor. Use a meat thermometer to check chicken reaches 165°F (74°C). Pack the bowls with dressing on the side for meal prep.
