Greek Chicken Bowls

Easy and fresh Greek Chicken Bowls featuring juicy chicken, grains, crisp vegetables, and creamy tzatziki in one bowl.

Ingredients

  • 2 Chicken breasts
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 Garlic cloves, minced
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Rice or quinoa
  • 1 Cucumber, chopped
  • 1 Tomato, chopped
  • 1 Red onion, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Olives, sliced
  • 1/2 cup Tzatziki sauce
  • Fresh Parsley, for garnish

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate chicken breasts in this mixture for at least 30 minutes.
  2. Grill the marinated chicken until cooked through, about 6-7 minutes per side. Let it rest before slicing.
  3. Cook rice or quinoa according to package instructions.
  4. Chop the cucumber, tomato, and red onion.
  5. To assemble the bowls, place a scoop of rice or quinoa at the bottom, then sliced chicken, and top with cucumbers, tomatoes, onions, feta, and olives.
  6. Drizzle with tzatziki sauce and garnish with parsley before serving.

Notes

Marinate the chicken for at least 30 minutes for better flavor. Use a meat thermometer to check chicken reaches 165°F (74°C). Pack the bowls with dressing on the side for meal prep.
