Garlic Parmesan Chicken Meatloaf

A lighter twist on classic meatloaf made with ground chicken, garlic, and Parmesan for a flavorful, juicy dish perfect for family gatherings.

Ingredients

  • 2 lbs Ground chicken
  • 1 tsp Basil, Dried
  • 4 cloves Garlic, minced
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Parsley, Dried
  • 2 tbsp Parsley, Fresh, chopped
  • 2 large Eggs
  • 1/2 tsp Black pepper
  • 1 tsp Salt
  • 1 cup Panko breadcrumbs
  • 2 tbsp Unsalted Butter, melted
  • 1 1/4 cup Parmesan cheese, grated
  • 1/2 cup Whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine the ground chicken, basil, minced garlic, garlic powder, onion powder, dried parsley, fresh parsley, eggs, black pepper, salt, panko breadcrumbs, melted butter, Parmesan cheese, and milk. Mix until well combined.
  3. Transfer the mixture to the prepared loaf pan and shape it into a loaf.
  4. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden brown.
  5. Let it cool for a few minutes before slicing and serving.

Notes

For added flavor, serve with additional Parmesan cheese or your favorite sauce. Store leftovers in an airtight container to keep fresh.
