Garlic Cauliflower Mushroom Skillet

Ingredients

  • 1 small head Cauliflower
  • 4 cloves Garlic
  • 8 oz Mushrooms
  • 1 Fresh parsley
  • 1 tbsp Lemon juice
  • 1/2 tsp Italian seasoning
  • 1/2 tsp Smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 1/4 cup Parmesan cheese

Instructions

  1. Cut the cauliflower into small florets.
  2. Clean and slice the mushrooms.
  3. In a skillet, heat olive oil and butter over medium heat.
  4. Add minced garlic and sauté until fragrant.
  5. Add cauliflower florets and mushrooms to the skillet.
  6. Season with Italian seasoning, smoked paprika, salt, and pepper.
  7. Sauté until the cauliflower is tender and the mushrooms are cooked through, about 10-12 minutes.
  8. Stir in lemon juice and chopped parsley.
  9. Sprinkle with Parmesan cheese before serving.

Notes

For a vegan version, skip the butter and Parmesan cheese and use nutritional yeast. This dish is gluten-free and can be made spicier by adding smoked paprika or cayenne pepper.
