French Onion Chicken Orzo Casserole

A comforting blend of caramelized onions, tender chicken, and creamy orzo pasta, perfect for family dinners or potlucks.

Ingredients

  • 2 cups Chicken, cooked
  • 3 Garlic cloves, minced
  • 1/2 tsp Thyme, dried
  • 2 large Yellow onions, sliced
  • 2 cups low sodium Chicken broth
  • 1 1/2 cups Orzo pasta
  • 1/4 tsp Black pepper
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • 1 tbsp Olive oil
  • 2 tbsp Butter, unsalted
  • 1 cup Heavy cream
  • 1 1/2 cups Mozzarella cheese
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and garlic; cook until the onions are caramelized, about 15-20 minutes.
  3. Stir in the thyme, salt, pepper, and sugar.
  4. In a large bowl, combine the orzo, cooked chicken, chicken broth, heavy cream, and the caramelized onion mixture. Mix well.
  5. Pour the mixture into a greased casserole dish and top with mozzarella and Parmesan cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Let it cool for a few minutes before serving.

Notes

For variation, use vegetable broth and add more vegetables for a vegetarian version.
