Ingredients

- 2 cups Chicken, cooked
- 3 Garlic cloves, minced
- 1/2 tsp Thyme, dried
- 2 large Yellow onions, sliced
- 2 cups low sodium Chicken broth
- 1 1/2 cups Orzo pasta
- 1/4 tsp Black pepper
- 1/2 tsp Salt
- 1 tsp Sugar
- 1 tbsp Olive oil
- 2 tbsp Butter, unsalted
- 1 cup Heavy cream
- 1 1/2 cups Mozzarella cheese
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and garlic; cook until the onions are caramelized, about 15-20 minutes.
- Stir in the thyme, salt, pepper, and sugar.
- In a large bowl, combine the orzo, cooked chicken, chicken broth, heavy cream, and the caramelized onion mixture. Mix well.
- Pour the mixture into a greased casserole dish and top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes before serving.
Notes
For variation, use vegetable broth and add more vegetables for a vegetarian version.
