- 2 cups Chicken, cooked
- 3 Garlic cloves
- 1/2 tsp Thyme, dried
- 2 Yellow onions, large
- 2 cups Chicken broth, low-sodium
- 1 1/2 cups Orzo pasta
- 1/4 tsp Black pepper
- 1/2 tsp Salt
- 1 tsp Sugar
- 1 tbsp Olive oil
- 2 tbsp Butter, unsalted
- 1 cup Heavy cream
- 1 1/2 cups Mozzarella cheese
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
- Add minced garlic, thyme, salt, pepper, and sugar; cook for another 2 minutes.
- Stir in the cooked chicken, chicken broth, heavy cream, and orzo pasta. Mix well and bring to a simmer.
- Transfer the mixture to a greased baking dish.
- Top with mozzarella and parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
For extra flavor, consider adding a splash of white wine when cooking the onions. You can use rotisserie chicken for quick preparation. This dish can also be made vegetarian by omitting the chicken.
