- 1 tablespoon olive oil
- 2 tablespoons butter
- 340 grams (3/4 pound) top sirloin, cut into cubes
- Salt, to taste
- Black pepper, to taste
- 2 medium carrots, chopped
- 3 tablespoons chives, chopped
- 1 large onion, chopped
- 6 large potatoes, peeled and chopped
- 1/2 cup beef broth
- 2 cups apple cider
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup milk
- 1/4 cup sour cream
Instructions
- In a large pot, heat olive oil and butter over medium heat.
- Add the cubed sirloin, salt, and black pepper, and cook until browned.
- Add the chopped onion and carrots, and cook until softened.
- Pour in the apple cider and beef broth, and bring to a simmer.
- Cover and cook for about 60 minutes, until the beef is tender.
- Meanwhile, boil the potatoes in salted water until tender.
- Drain the potatoes and mash them with cheddar cheese, milk, and sour cream until smooth.
- Adjust seasoning for the stew, then serve the cider braised beef over the cheddar mashed potatoes, garnished with chopped chives.
Notes
For extra flavor, marinate the beef in apple cider for a few hours before cooking. You can also add other vegetables like celery or peas for enhanced nutrition.
