Espresso Coffee Cheesecake

A rich and smooth espresso coffee cheesecake with a chocolate crust and ganache, perfect for dessert or as a special treat.

Ingredients

  • 1 1/2 cups chocolate graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 32 oz cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 2 tbsp espresso powder
  • 1 tsp vanilla extract
  • 8 oz semisweet chocolate, chopped
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a springform pan.
  2. Combine chocolate graham cracker crumbs with melted butter and press into the bottom of the pan.
  3. Beat together cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each.
  5. Mix in sour cream, espresso powder, and vanilla extract.
  6. Pour filling over crust and smooth.
  7. Bake for 55-60 minutes until edges are set but center jiggles.
  8. Cool in the oven for an hour then refrigerate for at least 4 hours.
  9. For ganache, heat heavy cream and pour over chopped chocolate. Stir until smooth.
  10. Pour ganache over chilled cheesecake.
  11. Return to fridge until set, slice, and serve.

Notes

Chill the cheesecake fully before slicing. Use a hot knife for clean slices. Serve with coffee or a light fruit sauce.
