Easy Spinach Garlic Meatballs

Small, tasty meatballs filled with melted mozzarella and fresh spinach, perfect for a quick weeknight meal.

Ingredients

  • 1 lb Ground beef or turkey
  • 4 cloves Garlic, minced
  • 1 small Onion, finely chopped
  • 1 tbsp Parsley, chopped
  • 2 cups Fresh Spinach, chopped
  • 1 large Egg
  • 1 tbsp Italian seasoning
  • Pepper to taste
  • 1/2 tsp Red pepper flakes
  • Salt to taste
  • 1 cup Breadcrumbs
  • 8 oz Low moisture mozzarella, cubed
  • 1/2 cup Grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef or turkey, garlic, onion, parsley, spinach, egg, Italian seasoning, pepper, red pepper flakes, salt, and breadcrumbs. Mix well until all ingredients are combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Press a small cube of mozzarella into the center of each meatball.
  6. Bake for 20-25 minutes or until the meatballs are cooked through and browned.
  7. Remove from the oven and sprinkle with parmesan cheese before serving.

Notes

Chop spinach small for better mixing and cooking. Do not overmix to keep meatballs tender.
