- 1 ½ cups all-purpose flour
- ½ cup brown sugar, packed
- ¾ cup unsalted butter, cold and cubed
- ¼ teaspoon salt
- 2 (8-ounce) packages cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 3 medium-sized apples, peeled and diced (Granny Smith or Honeycrisp)
- 1 teaspoon ground cinnamon
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- ½ cup caramel sauce (store-bought or homemade)
- Optional: whipped cream for serving
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine flour, brown sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into a greased 9×13-inch baking dish. Bake for 10–12 minutes or until lightly golden.
- In a large bowl, beat cream cheese until smooth. Add sugar, eggs, vanilla, and flour, mixing until fully combined. Pour over the baked crust and spread evenly.
- In another bowl, toss diced apples with cinnamon, sugar, and lemon juice. Spread the apple mixture evenly over the cheesecake layer.
- Bake for 30–35 minutes, or until the cheesecake is set and apples are tender. Let cool completely in the pan on a wire rack.
- Once cooled, drizzle caramel sauce over the top. Optionally, sprinkle with chopped nuts or extra streusel topping. Add a pinch of sea salt for a salted caramel twist.
- Cut into squares and serve chilled or at room temperature. Top with whipped cream if desired.
Notes
Store in an airtight container in the fridge for up to 5 days. Can be frozen for up to 3 months. Customize with different fruits, nuts, or spices for variation.
