  • ½ cup brown sugar, packed
  • ¾ cup unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 2 (8-ounce) packages cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 3 medium-sized apples, peeled and diced (Granny Smith or Honeycrisp)
  • 1 teaspoon ground cinnamon
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • ½ cup caramel sauce (store-bought or homemade)
  • Optional: whipped cream for serving

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, brown sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Press into a greased 9×13-inch baking dish. Bake for 10–12 minutes or until lightly golden.
  2. In a large bowl, beat cream cheese until smooth. Add sugar, eggs, vanilla, and flour, mixing until fully combined. Pour over the baked crust and spread evenly.
  3. In another bowl, toss diced apples with cinnamon, sugar, and lemon juice. Spread the apple mixture evenly over the cheesecake layer.
  4. Bake for 30–35 minutes, or until the cheesecake is set and apples are tender. Let cool completely in the pan on a wire rack.
  5. Once cooled, drizzle caramel sauce over the top. Optionally, sprinkle with chopped nuts or extra streusel topping. Add a pinch of sea salt for a salted caramel twist.
  6. Cut into squares and serve chilled or at room temperature. Top with whipped cream if desired.

Notes

Store in an airtight container in the fridge for up to 5 days. Can be frozen for up to 3 months. Customize with different fruits, nuts, or spices for variation.
