- 1 Cucumber
- 2 tbsp Dill, fresh
- 1 tsp Garlic powder
- 1 small Red onion
- 1 Yellow bell pepper
- 150 g Dill pickles
- 120 g Mayonnaise
- 60 ml Pickle juice
- 225 g Rotini pasta
- 1/2 tsp Black pepper
- 120 g Sour cream or Greek yogurt
Instructions
- Cook the rotini pasta according to package instructions; drain and cool.
- In a large bowl, combine chopped cucumber, dill, garlic powder, red onion, yellow bell pepper, diced dill pickles, mayonnaise, pickle juice, black pepper, and sour cream or Greek yogurt.
- Add the cooled pasta to the bowl and mix gently until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Serve cold or at room temperature. Garnish with extra dill or fresh herbs for added flavor.
