Dill Pickle Pasta Salad

A refreshing Dill Pickle Pasta Salad perfect for summer picnics, potlucks, or as a side dish, featuring pasta, crunchy vegetables, and tangy dill pickles.

Ingredients

  • 1 Cucumber
  • 2 tbsp Dill, fresh
  • 1 tsp Garlic powder
  • 1 small Red onion
  • 1 Yellow bell pepper
  • 150 g Dill pickles
  • 120 g Mayonnaise
  • 60 ml Pickle juice
  • 225 g Rotini pasta
  • 1/2 tsp Black pepper
  • 120 g Sour cream or Greek yogurt

Instructions

  1. Cook the rotini pasta according to package instructions; drain and cool.
  2. In a large bowl, combine chopped cucumber, dill, garlic powder, red onion, yellow bell pepper, diced dill pickles, mayonnaise, pickle juice, black pepper, and sour cream or Greek yogurt.
  3. Add the cooled pasta to the bowl and mix gently until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve cold or at room temperature. Garnish with extra dill or fresh herbs for added flavor.
