- 10 slices Bacon
- 1/4 bunch Chives
- 1/2 tsp Garlic powder
- 1 3/4 lb Potatoes
- 1/2 tsp Pepper
- 1 tsp Salt
- 3 1/2 tbsp Olive oil
- 2 1/2 tbsp Butter
- 1 3/4 cup Cheese
- 1 cup Sour cream
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and cut them in half. Scoop out some of the flesh to create a small cavity.
- In a skillet, cook the bacon until crispy. Remove and chop into small pieces.
- In a bowl, mix the scooped potato flesh with olive oil, garlic powder, pepper, salt, and half of the cheese.
- Fill each potato skin with the mixture and top with bacon and remaining cheese.
- Place the potato skins on a baking sheet and bake for about 20-25 minutes until golden and crispy.
- Serve warm with sour cream and chives on top.
Notes
Scoop just enough potato so the skin stays firm. Use sharp cheese for better melting and flavor. Cook bacon until very crispy to maintain crunch.
