- 1 lb ground beef
- 4 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, diced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional: garlic powder, thyme, and parsley for seasoning
Instructions
- Brown the ground beef in a skillet over medium heat, then drain any excess fat.
- In a slow cooker, combine the browned beef with diced potatoes, carrots, celery, onion, and beef broth.
- Cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
- Stir in the heavy cream and shredded cheese about 30 minutes before serving.
- Season with salt, pepper, and optional herbs to taste.
- Serve warm and enjoy!
Notes
For a lighter version, use ground turkey or chicken. You can also add corn or peas for extra vegetables.
