- 2 lbs Beef stew meat
- 2 cups Baby carrots
- 5 medium Potatoes
- 1 small Yellow onion
- 2 packages (1 ounce, each) dry onion soup mix
- 2 cans (10 ounces, each) cream of celery soup
- 1 cup Ketchup
- 1/2 tsp Paprika
Instructions
- Place the beef stew meat in the Crock Pot.
- Add baby carrots, diced potatoes, and chopped onion on top.
- In a bowl, mix the dry onion soup mix, cream of celery soup, ketchup, and paprika.
- Pour the soup mixture over the ingredients in the Crock Pot.
- Stir gently to combine.
- Cover and cook on low for 7-8 hours, or until the beef is tender.
- Serve hot.
Notes
Cut beef into uniform pieces for even cooking. Feel free to add other vegetables like peas or green beans for extra nutrition. For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it in about 30 minutes before serving.
