Crock Pot Beef Stew

Ingredients

  • 2 lbs Beef stew meat
  • 2 cups Baby carrots
  • 5 medium Potatoes
  • 1 small Yellow onion
  • 2 packages (1 ounce, each) dry onion soup mix
  • 2 cans (10 ounces, each) cream of celery soup
  • 1 cup Ketchup
  • 1/2 tsp Paprika

Instructions

  1. Place the beef stew meat in the Crock Pot.
  2. Add baby carrots, diced potatoes, and chopped onion on top.
  3. In a bowl, mix the dry onion soup mix, cream of celery soup, ketchup, and paprika.
  4. Pour the soup mixture over the ingredients in the Crock Pot.
  5. Stir gently to combine.
  6. Cover and cook on low for 7-8 hours, or until the beef is tender.
  7. Serve hot.

Notes

Cut beef into uniform pieces for even cooking. Feel free to add other vegetables like peas or green beans for extra nutrition. For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it in about 30 minutes before serving.
