Creamy Southern Black-Eyed Peas

Ingredients

  • 1 pound dried black-eyed peas
  • 4 cups water or broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil or butter
  • 1 bay leaf
  • Optional: diced ham or bacon

Instructions

  1. Rinse the black-eyed peas and soak them overnight if desired.
  2. In an Instant Pot, add the peas, water (or broth), onion, garlic, smoked paprika, salt, pepper, olive oil (or butter), bay leaf, and diced ham or bacon if using.
  3. Seal the lid and set to high pressure for 10 minutes.
  4. If using the stovetop, combine all ingredients in a pot, bring to a boil, then reduce to a simmer and cook for about 45 minutes to an hour until peas are tender.
  5. Release pressure or check peas after cooking on the stovetop, and adjust seasoning as needed.
  6. Serve warm.

Notes

Soaking the peas overnight helps them cook faster and makes them easier to digest. Adjust seasoning as needed, and for a creamier texture, consider mashing some of the peas after cooking.
