- 1 pound dried black-eyed peas
- 4 cups water or broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil or butter
- 1 bay leaf
- Optional: diced ham or bacon
Instructions
- Rinse the black-eyed peas and soak them overnight if desired.
- In an Instant Pot, add the peas, water (or broth), onion, garlic, smoked paprika, salt, pepper, olive oil (or butter), bay leaf, and diced ham or bacon if using.
- Seal the lid and set to high pressure for 10 minutes.
- If using the stovetop, combine all ingredients in a pot, bring to a boil, then reduce to a simmer and cook for about 45 minutes to an hour until peas are tender.
- Release pressure or check peas after cooking on the stovetop, and adjust seasoning as needed.
- Serve warm.
Notes
Soaking the peas overnight helps them cook faster and makes them easier to digest. Adjust seasoning as needed, and for a creamier texture, consider mashing some of the peas after cooking.
