- 12 oz rotini or penne pasta
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 can Rotel tomatoes (diced tomatoes with green chilies)
- 1 cup heavy cream
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta until al dente, drain, and set aside.
- Brown the ground beef in a large skillet and drain excess fat.
- Add Rotel tomatoes, garlic powder, salt, and pepper. Stir and simmer for 2-3 minutes.
- Pour in the heavy cream and mix. Bring to a simmer.
- Add the cooked pasta and shredded cheddar cheese. Stir until the cheese melts and the dish is hot.
- Serve right away.
Notes
For extra flavor, consider adding more cheese or using sharp cheddar. You can also serve with a side salad or steamed veggies.
