Creamy Rotel Pasta

A quick and easy creamy pasta dish with ground beef, cheese, and spicy Rotel tomatoes, perfect for busy weeknights.

Ingredients

  • 12 oz rotini or penne pasta
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta until al dente, drain, and set aside.
  2. Brown the ground beef in a large skillet and drain excess fat.
  3. Add Rotel tomatoes, garlic powder, salt, and pepper. Stir and simmer for 2-3 minutes.
  4. Pour in the heavy cream and mix. Bring to a simmer.
  5. Add the cooked pasta and shredded cheddar cheese. Stir until the cheese melts and the dish is hot.
  6. Serve right away.

Notes

For extra flavor, consider adding more cheese or using sharp cheddar. You can also serve with a side salad or steamed veggies.
