- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups mushrooms, sliced
- 1 cup heavy cream
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper. Mix well and form into meatballs.
- Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove and set aside.
- In the same skillet, add sliced mushrooms and cook until softened.
- Pour in chicken broth and bring to a simmer. Add heavy cream and stir until combined.
- Return meatballs to the skillet and simmer in the sauce for about 10-15 minutes until cooked through.
- Serve over mashed potatoes, pasta, or rice, and garnish with chopped parsley.
Notes
Don’t overmix the meatball mixture to keep them tender. For added flavor, consider using different herbs like thyme or oregano. You can replace heavy cream with half and half for a lighter sauce.
