Creamy Mushroom Chicken Meatballs

Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and pepper. Shape this mixture into small meatballs.
  2. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 6-8 minutes. Remove them from the skillet and set aside.
  3. In the same skillet, add sliced mushrooms and cook until they are soft, about 5 minutes.
  4. Pour in the chicken broth and bring it to a simmer. Allow it to reduce slightly for about 2-3 minutes.
  5. Stir in heavy cream and mix well. Add the meatballs back into the skillet. Let everything simmer for another 5 minutes.
  6. Serve hot, garnished with fresh parsley.

Notes

Use fresh mushrooms for a better flavor. Adjust the thickness of the sauce by adding more or less chicken broth.
