- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- Fresh parsley for garnish
Instructions
- In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and pepper. Shape this mixture into small meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 6-8 minutes. Remove them from the skillet and set aside.
- In the same skillet, add sliced mushrooms and cook until they are soft, about 5 minutes.
- Pour in the chicken broth and bring it to a simmer. Allow it to reduce slightly for about 2-3 minutes.
- Stir in heavy cream and mix well. Add the meatballs back into the skillet. Let everything simmer for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
Use fresh mushrooms for a better flavor. Adjust the thickness of the sauce by adding more or less chicken broth.
