- 1 lb chicken breast, diced
- 1 cup grated Parmesan cheese
- 12 oz penne pasta, cooked and drained
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the diced chicken over medium heat in olive oil until it’s no longer pink and nicely browned.
- Add minced garlic and sauté for another minute.
- In a large bowl, mix together the cooked pasta, chicken, heavy cream, chicken broth, Parmesan cheese, Italian seasoning, salt, and pepper until well combined.
- Pour the mixture into a greased baking dish and sprinkle mozzarella cheese on top.
- Bake for about 25-30 minutes or until the cheese is bubbling and golden brown.
- Let it cool for a moment before serving.
Notes
Serve hot with a green salad and garlic bread. Can be stored in the fridge for up to 3 days or frozen for up to 2 months.
