Creamy Cowboy Soup

A hearty and creamy soup packed with ground beef, potatoes, beans, and flavorful spices, perfect for chilly nights.

Ingredients

  • 1 lb Ground beef
  • 1 cup Corn, canned or frozen
  • 3 cloves Garlic, minced
  • 1 large Onion, diced
  • 2 medium Potatoes, diced
  • 14 1/2 oz Tomatoes, with juice, canned
  • 4 cups Beef broth
  • 1/2 tsp Black pepper
  • 1 tbsp Chili powder
  • 1 tbsp Smoked Paprika
  • 1 tsp Salt
  • 1 tsp Cumin
  • 1 cup Cheddar cheese, shredded
  • 1 cup Heavy cream
  • 15 oz Black beans, drained and rinsed if canned

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add onions and garlic, and sauté until the onions are translucent.
  3. Stir in diced potatoes, corn, canned tomatoes, black beans, and beef broth.
  4. Season with black pepper, chili powder, smoked paprika, salt, and cumin.
  5. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the potatoes are tender.
  6. Stir in heavy cream and cheddar cheese until melted and combined.
  7. Serve hot.

Notes

Top with extra cheddar cheese for added flavor. Serve with crusty bread or tortilla chips. Can add fresh herbs like cilantro for freshness.
