- 1 lb Ground beef
- 1 cup Corn, canned or frozen
- 3 cloves Garlic, minced
- 1 large Onion, diced
- 2 medium Potatoes, diced
- 14 1/2 oz Tomatoes, with juice, canned
- 4 cups Beef broth
- 1/2 tsp Black pepper
- 1 tbsp Chili powder
- 1 tbsp Smoked Paprika
- 1 tsp Salt
- 1 tsp Cumin
- 1 cup Cheddar cheese, shredded
- 1 cup Heavy cream
- 15 oz Black beans, drained and rinsed if canned
Instructions
- In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
- Add onions and garlic, and sauté until the onions are translucent.
- Stir in diced potatoes, corn, canned tomatoes, black beans, and beef broth.
- Season with black pepper, chili powder, smoked paprika, salt, and cumin.
- Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and combined.
- Serve hot.
Notes
Top with extra cheddar cheese for added flavor. Serve with crusty bread or tortilla chips. Can add fresh herbs like cilantro for freshness.
