Ingredients

- 1 cup orzo pasta
- 2 cups shredded cooked chicken
- 1 cup heavy cream
- 2 cups chicken broth
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 pre-made pie crust (optional)
Instructions
- Heat olive oil and sauté onion and garlic until translucent.
- Add mixed vegetables and cook for about 5 minutes.
- Stir in the shredded chicken, chicken broth, and heavy cream; bring to a simmer.
- Add orzo and thyme, simmer until orzo is tender.
- Season with salt and pepper to taste.
- If using a crust, preheat oven according to package instructions.
- Pour filling into the crust or serve directly from the skillet; bake until golden if using crust.
- Allow to cool slightly before serving.
Notes
This dish can easily be customized with different vegetables or chicken substitutes. Leftovers improve in flavor.
