Creamy Chicken Pot Pie with Orzo and Shredded Chicken

Ingredients

  • 1 cup orzo pasta
  • 2 cups shredded cooked chicken
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 pre-made pie crust (optional)

Instructions

  1. Heat olive oil and sauté onion and garlic until translucent.
  2. Add mixed vegetables and cook for about 5 minutes.
  3. Stir in the shredded chicken, chicken broth, and heavy cream; bring to a simmer.
  4. Add orzo and thyme, simmer until orzo is tender.
  5. Season with salt and pepper to taste.
  6. If using a crust, preheat oven according to package instructions.
  7. Pour filling into the crust or serve directly from the skillet; bake until golden if using crust.
  8. Allow to cool slightly before serving.

Notes

This dish can easily be customized with different vegetables or chicken substitutes. Leftovers improve in flavor.
