Cottage Cheese Pancakes

Ingredients

  • 2 large Eggs
  • 1/2 tsp Baking powder
  • 1/2 cup Oat flour
  • 1/4 tsp Salt
  • 2 tbsp Sweetener, granulated
  • 1 tsp Vanilla extract
  • 1 Cooking spray or butter
  • 1 cup Cottage cheese, full-fat or low-fat
  • 1/4 cup Optional add-ins (blueberries, chocolate chips, or chopped nuts)

Instructions

  1. Mix the dry and wet ingredients in a bowl, whisking until smooth.
  2. Stir in the cottage cheese until evenly distributed.
  3. Heat a non-stick skillet over medium heat and add cooking spray or butter.
  4. Pour 1/4 cup of batter per pancake onto the skillet.
  5. Cook until bubbles form and hold, about 2-3 minutes, then flip and cook until golden brown, about 1-2 minutes.
  6. Serve warm with your choice of toppings.

Notes

Use good-quality ingredients for the best flavor and consider adding blueberries or chocolate chips for extra sweetness.
