Ingredients

- 2 cups Rotisserie chicken
- 3 cloves Garlic
- 8 oz Mushrooms, fresh
- 1 Onion, medium
- 1 tsp Thyme, fresh
- 4 cups Vegetable broth, low sodium
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 cup Heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add diced onion and minced garlic, sauté until softened.
- Stir in sliced mushrooms and thyme, cook until mushrooms are tender.
- Add the rotisserie chicken and vegetable broth, bring to a simmer.
- Season with salt and pepper.
- Stir in the heavy cream, heat through, then serve.
Notes
For extra flavor, add a splash of lemon juice or crushed red pepper flakes. If you prefer a thicker soup, blend part of it after cooking. Do not overcook the heavy cream.
