Clean Chicken Mushroom Soup

A comforting and hearty chicken mushroom soup made with rotisserie chicken, perfect for chilly days.

Ingredients

  • 2 cups Rotisserie chicken
  • 3 cloves Garlic
  • 8 oz Mushrooms, fresh
  • 1 Onion, medium
  • 1 tsp Thyme, fresh
  • 4 cups Vegetable broth, low sodium
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1 cup Heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Stir in sliced mushrooms and thyme, cook until mushrooms are tender.
  4. Add the rotisserie chicken and vegetable broth, bring to a simmer.
  5. Season with salt and pepper.
  6. Stir in the heavy cream, heat through, then serve.

Notes

For extra flavor, add a splash of lemon juice or crushed red pepper flakes. If you prefer a thicker soup, blend part of it after cooking. Do not overcook the heavy cream.
