Clean Chicken Mushroom Soup

A warm and comforting soup made with rotisserie chicken, fresh mushrooms, and a creamy broth.

Ingredients

  • 2 cups Rotisserie chicken
  • 3 cloves Garlic
  • 8 oz Mushrooms, fresh
  • 1 Onion, medium
  • 1 tsp Thyme, fresh
  • 4 cups Vegetable broth, low-sodium
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1 cup Heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the mushrooms and cook until they start to brown.
  4. Add the rotisserie chicken and thyme, mixing well.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Season with salt and pepper, then stir in the heavy cream.
  7. Cook for an additional 5 minutes, then serve warm.

Notes

For thicker soup, blend a portion and stir it back in. Can add vegetables like spinach or carrots for extra nutrients.
