Ingredients

- 2 cups Rotisserie chicken
- 3 cloves Garlic
- 8 oz Mushrooms, fresh
- 1 Onion, medium
- 1 tsp Thyme, fresh
- 4 cups Vegetable broth, low-sodium
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 cup Heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until softened.
- Stir in the mushrooms and cook until they start to brown.
- Add the rotisserie chicken and thyme, mixing well.
- Pour in the vegetable broth and bring to a simmer.
- Season with salt and pepper, then stir in the heavy cream.
- Cook for an additional 5 minutes, then serve warm.
Notes
For thicker soup, blend a portion and stir it back in. Can add vegetables like spinach or carrots for extra nutrients.
