Ingredients

- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup egg noodles
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 medium onion, chopped
- 1 cup carrots, sliced
- 1 cup celery, sliced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add chopped onion, garlic, and ginger, and sauté until fragrant.
- Add carrots and celery, cooking until tender.
- Pour in chicken broth and bring to a boil.
- Add the egg noodles and cooked chicken.
- Season with salt and pepper, and simmer until noodles are cooked.
- Serve hot, garnished with green onions.
Notes
For best flavor, grate fresh ginger instead of using powdered ginger. Adjust salt and pepper as needed before serving.
