Classic Ginger Garlic Chicken Noodle Soup

Ingredients

  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup egg noodles
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 medium onion, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add chopped onion, garlic, and ginger, and sauté until fragrant.
  3. Add carrots and celery, cooking until tender.
  4. Pour in chicken broth and bring to a boil.
  5. Add the egg noodles and cooked chicken.
  6. Season with salt and pepper, and simmer until noodles are cooked.
  7. Serve hot, garnished with green onions.

Notes

For best flavor, grate fresh ginger instead of using powdered ginger. Adjust salt and pepper as needed before serving.
