  • 3 large eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ cup brown sugar
  • 2 tablespoons all-purpose flour
  • ¼ cup melted butter (for swirl)
  • ½ cup brown sugar (for swirl)
  • 2 teaspoons ground cinnamon (for swirl)
  • 8 oz cream cheese (for frosting)
  • ¼ cup unsalted butter (for frosting)
  • 1 to cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press into a 9-inch springform pan and bake for 10 minutes. Cool completely.
  2. In a large bowl, beat cream cheese until smooth. Add granulated sugar and beat until fluffy. Add eggs one at a time, beating after each. Mix in sour cream, vanilla, cinnamon, brown sugar, and flour until combined.
  3. In a small bowl, mix melted butter, brown sugar, and cinnamon for the swirl.
  4. Pour half the cheesecake filling over the crust. Drizzle half the swirl and gently marble with a knife. Repeat with remaining filling and swirl.
  5. Lower oven to 325°F (163°C). Bake 55–65 minutes until center is slightly jiggly. Turn off oven, crack door, and let cheesecake rest inside for 1 hour. Cool completely at room temperature, then chill for at least 4 hours or overnight.
  6. Beat softened cream cheese and butter until creamy. Gradually add powdered sugar, vanilla, and cinnamon (optional), beating until fluffy.
  7. Remove cheesecake from pan. Spread frosting on top. Garnish with cinnamon, drizzle of honey or caramel, or chopped nuts if desired. Serve chilled or at room temperature.

Notes

Use room temperature ingredients for a smooth batter. Chill thoroughly before serving. Customize swirl or topping to taste.
