Chocolate Mousse Brownies

Rich brownies topped with a light and creamy chocolate mousse, perfect for any chocolate lover.

Ingredients

  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 12 oz semisweet chocolate
  • 1/3 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 tbsp powdered sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 1/2 cups heavy whipping cream
  • 3 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking pan.
  2. Melt the semisweet chocolate and unsalted butter together in a double boiler or microwave, stirring until smooth.
  3. In a mixing bowl, beat the eggs with granulated sugar until light and fluffy.
  4. Stir in the melted chocolate mixture and vanilla extract.
  5. Sift together the flour, cocoa powder, baking powder, and salt; fold into the chocolate mixture until just combined.
  6. Pour the brownie batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out mostly clean.
  7. In another bowl, whip the heavy cream until soft peaks form.
  8. Let the brownies cool completely; then spread a layer of whipped cream on top, and refrigerate.
  9. Serve chilled and dust with powdered sugar before serving.

Notes

Serve with a scoop of vanilla ice cream or fresh berries.
