Chocolate Chip Cheesecake Cookies

Delicious cookies with a soft, chewy texture and a creamy cheesecake surprise in the middle.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup sugar
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, brown sugar, and granulated sugar in a large bowl until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine flour, baking soda, and salt; gradually add to the creamed mixture.
  5. Mix in chocolate chips.
  6. In a separate bowl, beat the cream cheese with sugar and the egg until smooth to make the cheesecake filling.
  7. Take a tablespoon of cookie dough, flatten it, and place a small amount of cheesecake filling in the center; fold the dough around it to form a ball.
  8. Place on a baking sheet lined with parchment paper.
  9. Freeze the filled cookies for about 15 minutes to prevent the filling from running during baking.
  10. Bake in the preheated oven for 10-12 minutes or until edges are golden.
  11. Allow to cool before serving.

Notes

Serve warm or at room temperature. Pairs well with milk or coffee. Can sprinkle powdered sugar on top for extra sweetness.
