Chipotle Honey Chicken Thighs With Smoked Gouda Mashed Potatoes

A comforting dish blending sweet and smoky chicken thighs with rich and creamy smoked gouda mashed potatoes.

Ingredients

  • 4 pieces Chicken thighs, bone-in
  • 2 tbsp Chipotle chili powder
  • 1 tsp Garlic powder
  • 2 lbs Russet potatoes
  • 1/4 cup Honey
  • 1/2 tsp Black pepper
  • 1 tsp Salt
  • 1 tbsp Olive oil
  • 4 tbsp Butter, unsalted
  • 4 oz Gouda cheese, smoked
  • 1 cup Milk

Instructions

  1. Mix the honey and chipotle chili powder. Add a little olive oil if you like. Coat the chicken thighs in the mixture and let them sit for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet and bake until the skin is caramelized and the inside is juicy, about 30–40 minutes depending on size.
  3. Peel and cut the russet potatoes into even chunks. Put them in a pot of cold water and bring to a boil. Cook until tender, about 15–20 minutes.
  4. Drain the potatoes and return them to the pot. Add butter, smoked gouda, milk, garlic powder, salt, and black pepper. Mash until smooth and creamy.
  5. Serve the baked chicken thighs on top of or next to the smoked gouda mashed potatoes.

Notes

Marinate chicken at least 30 minutes; overnight is better for more flavor. Pat the chicken dry before baking for better browning. Warm the milk before adding to potatoes to keep them fluffy.
