- 4 pieces Chicken thighs, bone-in
- 2 tbsp Chipotle chili powder
- 1 tsp Garlic powder
- 2 lbs Russet potatoes
- 1/4 cup Honey
- 1/2 tsp Black pepper
- 1 tsp Salt
- 1 tbsp Olive oil
- 4 tbsp Butter, unsalted
- 4 oz Gouda cheese, smoked
- 1 cup Milk
Instructions
- Mix the honey and chipotle chili powder. Add a little olive oil if you like. Coat the chicken thighs in the mixture and let them sit for at least 30 minutes.
- Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet and bake until the skin is caramelized and the inside is juicy, about 30–40 minutes depending on size.
- Peel and cut the russet potatoes into even chunks. Put them in a pot of cold water and bring to a boil. Cook until tender, about 15–20 minutes.
- Drain the potatoes and return them to the pot. Add butter, smoked gouda, milk, garlic powder, salt, and black pepper. Mash until smooth and creamy.
- Serve the baked chicken thighs on top of or next to the smoked gouda mashed potatoes.
Notes
Marinate chicken at least 30 minutes; overnight is better for more flavor. Pat the chicken dry before baking for better browning. Warm the milk before adding to potatoes to keep them fluffy.
