Chicken Normandy

Ingredients

  • 4 boneless chicken breasts
  • 2 cups apple cider
  • 2 apples, sliced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)
  • Rice or crusty bread for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until browned on both sides, about 5-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onions and sliced apples. Sauté until the onions are translucent and the apples are slightly softened, about 5 minutes.
  5. Pour in the apple cider and bring to a simmer.
  6. Return the chicken to the skillet, cover, and cook for an additional 15-20 minutes, or until the chicken is cooked through.
  7. Serve the chicken with the cider sauce over rice or with crusty bread, garnished with fresh thyme if desired.

Notes

For added flavor, marinate the chicken in apple cider for a couple of hours before cooking. Adjust the sweetness of the dish by using a sweeter or drier apple cider based on your preference.
