- 1 cup Cherries, fresh pitted and chopped
- 1/2 cup Cherry juice
- 2 tbsp Cherry preserves
- 1/4 cup Cocoa powder
- 1/4 cup Dark chocolate, chopped
- 1/4 cup Granulated sugar
- 1 tsp Vanilla extract
- 1 package Ladyfingers
- 1 cup Heavy cream
- 2 cups Mascarpone cheese
- 1/2 cup Amaretto liqueur
Instructions
- In a bowl, combine the cherries, cherry juice, cherry preserves, and amaretto liqueur. Set aside.
- In a separate bowl, whip the heavy cream, adding granulated sugar and vanilla extract until soft peaks form. Then fold in the mascarpone cheese.
- Dip each ladyfinger in the cherry juice mixture and layer in a dish. Spread half of the mascarpone mixture over the ladyfingers.
- Layer the remaining ladyfingers on top, then add the rest of the mascarpone mixture.
- Refrigerate for at least 4 hours.
- Before serving, dust with cocoa powder and garnish with chopped dark chocolate.
Notes
Serve chilled, and pair with coffee or tea. Can be topped with whipped cream or fresh cherries for an extra touch.
