- 2 cups cooked chicken, shredded or chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 3 tbsp hot honey (store bought or mix honey + hot sauce)
- 1 tbsp olive oil or butter for cooking
- Salt and black pepper to taste
- 1/2 cup sour cream or Greek yogurt
- 1 small jalapeño, seeded and chopped (leave seeds for more heat)
- 1 tbsp lime juice
- 1/4 tsp salt
Instructions
- In a small bowl, mix sour cream, chopped jalapeño, lime juice, and salt to prepare the sauce. Taste and adjust heat.
- Warm the chicken in a pan with a little salt and pepper, then stir in the hot honey until coated.
- Lay a tortilla flat, sprinkle a layer of cheddar and Monterey Jack on one half, add the hot honey chicken, and top with more cheese. Fold the tortilla over.
- Heat a skillet over medium heat, add oil or butter, and cook the folded quesadilla for 2–3 minutes per side until golden and cheese melts.
- Transfer to a cutting board, let rest for 1 minute, then cut into wedges.
- Serve with the jalapeño cream sauce on the side.
Notes
For a vegetarian version, replace chicken with roasted sweet potato or beans and drizzle with hot honey. Use leftover rotisserie chicken for convenience.
