- 2 1/2 cups Chicken
- 2 tablespoons Green chilies
- 10 ounces Tomatoes with green chilies
- 1/2 Packet Taco seasoning
- 5 Burrito size flour tortillas
- 1 cup Cheddar cheese
- 1 pound Queso blanco Velveeta
- 1 cup Sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the chicken, green chilies, tomatoes with green chilies, and taco seasoning.
- Take a flour tortilla and fill it with the chicken mixture. Roll it up and place it seam-side down in a greased baking dish.
- Repeat with the remaining tortillas.
- In a separate bowl, mix together the queso blanco Velveeta and sour cream until smooth.
- Pour the cheese mixture over the rolled enchiladas in the baking dish.
- Sprinkle cheddar cheese on top.
- Bake in the preheated oven for 20-25 minutes or until bubbly and golden.
- Serve hot.
Notes
Use rotisserie chicken for extra flavor. Adjust the amount of green chilies based on spice preference.
