Cheese Chicken Enchiladas

Delightful and satisfying Cheese Chicken Enchiladas filled with tender chicken and creamy cheese, perfect for family meals or gatherings.

Ingredients

  • 2 1/2 cups Chicken
  • 2 tablespoons Green chilies
  • 10 ounces Tomatoes with green chilies
  • 1/2 Packet Taco seasoning
  • 5 Burrito size flour tortillas
  • 1 cup Cheddar cheese
  • 1 pound Queso blanco Velveeta
  • 1 cup Sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the chicken, green chilies, tomatoes with green chilies, and taco seasoning.
  3. Take a flour tortilla and fill it with the chicken mixture. Roll it up and place it seam-side down in a greased baking dish.
  4. Repeat with the remaining tortillas.
  5. In a separate bowl, mix together the queso blanco Velveeta and sour cream until smooth.
  6. Pour the cheese mixture over the rolled enchiladas in the baking dish.
  7. Sprinkle cheddar cheese on top.
  8. Bake in the preheated oven for 20-25 minutes or until bubbly and golden.
  9. Serve hot.

Notes

Use rotisserie chicken for extra flavor. Adjust the amount of green chilies based on spice preference.
