Cajun Potato Soup

A creamy, spicy, and filling soup featuring andouille sausage and Cajun spices, perfect for a weeknight dinner.

Ingredients

  • 1 lb andouille sausage, sliced
  • 3 large potatoes, diced
  • 2 cups mixed vegetables (carrots, celery, bell peppers)
  • 2 tbsp Cajun spice blend
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 4 cups broth (chicken or vegetable)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp olive oil (or butter)

Instructions

  1. In a large pot, heat olive oil (or butter) over medium heat.
  2. Add chopped onions and garlic, sauté until soft.
  3. Add sliced andouille sausage, cooking until browned.
  4. Stir in chopped potatoes and mixed vegetables.
  5. Pour in the broth and bring to a boil.
  6. Reduce heat and add Cajun spice blend, salt, and pepper to taste.
  7. Simmer until potatoes are tender.
  8. Stir in heavy cream and cheddar cheese, mixing until cheese is melted.
  9. Serve hot, garnished with additional cheese or green onions if desired.

Notes

Cut potatoes in even pieces for uniform cooking. Adjust spice levels to your preference. Use a good quality broth for the best flavor.
