- 1 lb andouille sausage, sliced
- 3 large potatoes, diced
- 2 cups mixed vegetables (carrots, celery, bell peppers)
- 2 tbsp Cajun spice blend
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 4 cups broth (chicken or vegetable)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil (or butter)
Instructions
- In a large pot, heat olive oil (or butter) over medium heat.
- Add chopped onions and garlic, sauté until soft.
- Add sliced andouille sausage, cooking until browned.
- Stir in chopped potatoes and mixed vegetables.
- Pour in the broth and bring to a boil.
- Reduce heat and add Cajun spice blend, salt, and pepper to taste.
- Simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese, mixing until cheese is melted.
- Serve hot, garnished with additional cheese or green onions if desired.
Notes
Cut potatoes in even pieces for uniform cooking. Adjust spice levels to your preference. Use a good quality broth for the best flavor.
