Cajun Beef Spaghetti in Creamy Three-Cheese Parmesan Sauce

Ingredients

  • 12 oz spaghetti
  • 1 lb ground beef (or sirloin)
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 1/4 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup grated parmesan cheese
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti until al dente. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef, season with Cajun seasoning, salt, and pepper. Sear until browned and cooked through. Remove and set aside.
  3. Lower heat to medium. In the same skillet, melt butter and sauté garlic until fragrant (about 30 seconds).
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Gradually whisk in mozzarella, cheddar, and parmesan. Stir until the sauce is creamy and smooth.
  6. Toss the cooked spaghetti into the sauce. Add reserved pasta water if needed to loosen it up.
  7. Fold the seared beef into the pasta and sauce mixture. Let it simmer for 1-2 minutes.
  8. Plate and garnish with fresh parsley and additional parmesan if desired.

Notes

Taste and adjust Cajun seasoning for spice preference. Reserve pasta water for sauce consistency.
