  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice according to package instructions.
  2. Prepare your protein by grilling chicken or cooking beans.
  3. In a baking dish, layer the cooked rice, protein, beans, corn, bell peppers, and cheese.
  4. Season each layer with cumin, chili powder, and paprika.
  5. Repeat layers, making sure to end with cheese on top.
  6. Bake in a preheated oven at 350°F (175°C) for 30-40 minutes until heated through and cheese is bubbly.
