- 1 can Black beans
- 1/4 cup fresh Cilantro
- 1 1/2 cups canned Corn kernels
- 3 Green onions
- 1 medium Jalapeno pepper
- 1 small Red bell pepper
- 2 tbsp Chipotle sauce
- 1/4 cup fresh Lime juice
- 1/2 cup Mayonnaise
- 1 bag Coleslaw mix
- 1 tbsp Taco seasoning
- 1/2 tsp ground Cumin
- 1 bag Chili cheese fritos
- 1/2 cup Sour cream
Instructions
- In a large bowl, combine the coleslaw mix, black beans, corn kernels, chopped green onions, diced jalapeno, and diced red bell pepper.
- In another bowl, whisk together the chipotle sauce, lime juice, mayonnaise, taco seasoning, cumin, and sour cream until smooth.
- Pour the dressing over the slaw mixture and toss to combine.
- Let the coleslaw sit for at least 10 minutes to allow the flavors to meld.
- Just before serving, top with crushed Chili cheese Fritos for added crunch.
Notes
For added freshness, use fresh lime zest along with lime juice. Adjust jalapeno for spice preference. Increase sour cream or mayonnaise for a creamier texture.
