Blackened Shrimp Stroganoff

Ingredients

  • 8 oz fettuccine or egg noodles
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine or egg noodles according to package instructions; drain and set aside.
  2. Toss the shrimp with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until blackened and cooked through. Remove shrimp and set aside.
  4. In the same skillet, add onion and garlic, sauté for 2 minutes. Add mushrooms and cook until softened.
  5. Pour in chicken broth and bring to a simmer. Stir in heavy cream, then return shrimp to the skillet.
  6. Combine with cooked pasta and season with salt and pepper. Garnish with fresh parsley before serving.

Notes

Avoid overcooking the shrimp; they should be pink and opaque but still tender. Adjust Cajun seasoning to fit your spice preference.
