- 8 oz fettuccine or egg noodles
- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine or egg noodles according to package instructions; drain and set aside.
- Toss the shrimp with Cajun seasoning.
- In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until blackened and cooked through. Remove shrimp and set aside.
- In the same skillet, add onion and garlic, sauté for 2 minutes. Add mushrooms and cook until softened.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, then return shrimp to the skillet.
- Combine with cooked pasta and season with salt and pepper. Garnish with fresh parsley before serving.
Notes
Avoid overcooking the shrimp; they should be pink and opaque but still tender. Adjust Cajun seasoning to fit your spice preference.
