- 2 cups Fresh Blackberries
- 1 large Egg
- 1 large Egg yolk
- 1 tablespoon Lemon juice
- 1 cup All purpose flour
- 1 teaspoon Baking powder
- 1/2 cup Light Brown sugar
- 2 tablespoons Cornstarch
- 3/4 cup Granulated sugar
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 1 cup Pistachios
- 2 tablespoons Ice water
- 1 cup Unsalted Butter
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a mixing bowl, combine the all-purpose flour, baking powder, cornstarch, light brown sugar, granulated sugar, and salt. Mix well.
- In another bowl, whisk together the egg, egg yolk, lemon juice, vanilla extract, and ice water.
- Melt the unsalted butter and mix it with the wet ingredients.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the fresh blackberries and chopped pistachios.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let cool completely in the pan before cutting into bars. Serve and enjoy!
Notes
For best results, use fresh, firm blackberries. Store bars in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
