Best-Ever Blueberry Thyme Chicken

Ingredients

  • 4 Chicken breasts, boneless skinless
  • 1 cup Blueberries, fresh
  • 2 cloves Garlic, minced
  • 2 tbsp Thyme, fresh
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Honey
  • Salt and pepper to taste
  • 2 tbsp Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the balsamic vinegar, honey, salt, and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Season the chicken breasts with salt and pepper, and sear them in the skillet for 3-4 minutes on each side until golden brown.
  5. Add minced garlic and thyme to the pan, then pour the balsamic mixture over the chicken.
  6. Scatter the fresh blueberries on top of the chicken.
  7. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is fully cooked.
  8. Serve warm and enjoy!

Notes

Store leftovers in an airtight container for 3-4 days. Can be reheated in the oven or microwave.
