Ingredients

- 4 Chicken breasts, boneless skinless
- 1 cup Blueberries, fresh
- 2 cloves Garlic, minced
- 2 tbsp Thyme, fresh
- 1 tbsp Balsamic vinegar
- 1 tbsp Honey
- Salt and pepper to taste
- 2 tbsp Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the balsamic vinegar, honey, salt, and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Season the chicken breasts with salt and pepper, and sear them in the skillet for 3-4 minutes on each side until golden brown.
- Add minced garlic and thyme to the pan, then pour the balsamic mixture over the chicken.
- Scatter the fresh blueberries on top of the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is fully cooked.
- Serve warm and enjoy!
Notes
Store leftovers in an airtight container for 3-4 days. Can be reheated in the oven or microwave.
