- 5 oz Lobster meat
- 5 oz Lump crab
- 1 lb Shrimp
- 1 can Black beans
- 1/2 cup Corn, whole kernel frozen
- 2 Garlic cloves
- 1 can Great northern beans
- 1 cup Onion (chopped)
- 2 cups Chicken broth, low sodium
- 1 can Tomatoes with chilis
- 1 tsp Olive oil
- 1 cup Colby and Monterey Jack cheese (for topping)
- 3 oz Cream cheese
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic; sauté until onion is translucent.
- Stir in the black beans, great northern beans, corn, and tomatoes with chilis.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the lobster meat, crab, and shrimp. Cook until the shrimp turns pink and seafood is heated through.
- Reduce heat and stir in the cream cheese until melted.
- Serve hot, topped with Colby and Monterey Jack cheese.
Notes
Serve with bread, crackers, or a salad. Reheat gently on the stove if stored in the fridge.
