Ingredients

- 1/2 cup mixed berries
- 1 tsp lemon zest
- 1 large egg
- 1 tsp lemon juice
- 1 tsp cornstarch
- 6 1/3 tbsp granulated sugar
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- 1 cup graham cracker crumbs
- 3 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/4 cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press into mini muffin tins to form the crust.
- In another bowl, beat cream cheese, sour cream, 6 1/3 tablespoons of granulated sugar, egg, lemon juice, cornstarch, and vanilla extract until smooth.
- Pour cream cheese mixture over the crust in the muffin tins.
- Mash mixed berries with 1 teaspoon of lemon zest and 1 tablespoon of sugar.
- Drop spoonfuls of berry mixture on top of cheesecake filling and swirl with a toothpick or knife.
- Bake for 20-25 minutes until the centers are set.
- Let cool to room temperature, then refrigerate for at least 2 hours before serving.
Notes
Enjoy as is, or garnish with extra berries or mint leaves for an elegant presentation.
