Berry Swirl Cheesecake Bites

Delicious mini cheesecake bites with a tangy cream cheese filling and a sweet berry swirl, perfect for sharing.

Ingredients

  • 1/2 cup mixed berries
  • 1 tsp lemon zest
  • 1 large egg
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 6 1/3 tbsp granulated sugar
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 3 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press into mini muffin tins to form the crust.
  3. In another bowl, beat cream cheese, sour cream, 6 1/3 tablespoons of granulated sugar, egg, lemon juice, cornstarch, and vanilla extract until smooth.
  4. Pour cream cheese mixture over the crust in the muffin tins.
  5. Mash mixed berries with 1 teaspoon of lemon zest and 1 tablespoon of sugar.
  6. Drop spoonfuls of berry mixture on top of cheesecake filling and swirl with a toothpick or knife.
  7. Bake for 20-25 minutes until the centers are set.
  8. Let cool to room temperature, then refrigerate for at least 2 hours before serving.

Notes

Enjoy as is, or garnish with extra berries or mint leaves for an elegant presentation.
