Beef Tortilla Stack Bake

Ingredients

  • 1 lb ground beef
  • 1 packet of taco seasoning
  • 68 flour tortillas
  • 1 can of salsa con queso
  • 1 cup of shredded Mexican cheese blend
  • Diced tomatoes (optional)
  • Sliced black olives (optional)
  • Chopped fresh cilantro (optional)
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a pan over medium-high heat; drain excess grease.
  3. Mix in taco seasoning and salsa con queso with the beef.
  4. Start layering in a baking dish: beef mixture, tortillas, repeat until done, ending with cheese on top.
  5. Bake for 15-20 minutes until the cheese is melted and edges are golden brown.
  6. Optionally, broil for 1-2 minutes for a crisper top.
  7. Let it rest for a few minutes before serving.
