Beef Tenderloin and Gorgonzola Crostini

A delicious appetizer combining tender beef and creamy Gorgonzola cheese set on toasted baguette slices.

Ingredients

  • 1 lb Beef tenderloin
  • 1 tsp Chives or parsley, fresh
  • 1 tsp Thyme, fresh
  • 1 tbsp Balsamic glaze
  • Salt and freshly cracked black pepper, to taste
  • 1 tbsp Olive oil
  • 1 French baguette
  • 2 tbsp Butter
  • 1 tbsp Cream cheese
  • 4 oz Gorgonzola cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper. In a skillet, heat the olive oil over medium-high heat. Sear the beef on all sides until it reaches your desired doneness. Remove from heat and let it rest.
  3. Slice the French baguette into 1/2 inch slices and spread butter on one side. Place them on a baking sheet and toast in the oven until golden brown.
  4. Once the beef has rested, slice it thinly.
  5. Spread a layer of cream cheese on each toasted baguette slice. Top with a piece of beef and add crumbled Gorgonzola cheese. Drizzle with balsamic glaze and sprinkle with chives or parsley and thyme before serving.

Notes

Make sure to slice the beef as thinly as possible for easier eating. Choose a nice, crusty baguette for a better texture. Feel free to experiment with other cheeses or spreads for different flavors.
