BBQ Chicken Quesadillas

Delightful and easy BBQ Chicken Quesadillas filled with juicy chicken, rich BBQ sauce, and melted cheese, all wrapped in a crispy tortilla.

Ingredients

  • 2 cups cooked Chicken
  • 1/4 cup Green onions
  • 1/2 cup Barbecue sauce
  • 2 tbsp Olive oil
  • 4 large Flour tortillas
  • 2 cups Cheddar cheese

Instructions

  1. In a pan, heat olive oil over medium heat.
  2. Add cooked chicken and barbecue sauce, stirring until heated through.
  3. Lay a flour tortilla in the pan and sprinkle half of it with cheddar cheese, followed by the chicken mixture and some green onions.
  4. Fold the tortilla over and cook for 2-3 minutes until the cheese is melted and the tortilla is golden.
  5. Flip and cook the other side for another 2-3 minutes.
  6. Repeat with the remaining tortillas.
  7. Serve warm, cut into wedges.

Notes

Best served warm with dipping sauces like sour cream, salsa, or guacamole. You can store leftovers in the fridge for up to 3 days.
