Baked Apples with Feta, Honey, and Cranberries

Ingredients

  • 4 medium Apples
  • 1/4 cup Dried Cranberries
  • 1 tbsp Fresh Mint
  • 2 tbsp Honey
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Vanilla extract
  • 1 tbsp Unsalted Butter
  • 1/2 cup Feta cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Core the apples and slice them in half.
  3. In a bowl, mix the dried cranberries, fresh mint, honey, ground cinnamon, vanilla extract, and feta cheese.
  4. Stuff each apple half with the mixture.
  5. Place the apples in a baking dish and dot with unsalted butter.
  6. Bake in the preheated oven for 25-30 minutes, until the apples are tender.
  7. Serve warm.

Notes

Pair with vanilla ice cream or whipped cream for an extra treat. Store leftovers in an airtight container in the refrigerator for up to three days.
