Bagel and Cream Cheese Casserole

A delicious make-ahead breakfast casserole that combines everything bagel seasoning, crispy bacon, eggs, and a rich cream cheese mixture.

Ingredients

  • 3 day-old everything bagels, cut into quarters
  • 1 bell pepper, diced
  • 3/4 cup quartered cherry tomatoes
  • 6 slices of cooked bacon, crumbled
  • 9 large eggs
  • 1 and 1/2 cups whole milk
  • 1 and 1/2 cups shredded cheese
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 6 ounces full-fat cream cheese, softened

Instructions

  1. Layer half of the bagel pieces in a greased baking dish. Add half of the diced bell pepper, cherry tomatoes, and crumbled bacon.
  2. In a bowl, whisk together the eggs, milk, shredded cheese, mustard, salt, and pepper until smooth.
  3. Pour the egg mixture evenly over the layered ingredients in the baking dish.
  4. Add a layer of cream cheese on top, and sprinkle with everything bagel seasoning.
  5. Repeat the layering process with the remaining ingredients.
  6. Cover and refrigerate overnight or bake immediately at 375°F (191°C) for 40-50 minutes until set and golden.

Notes

For optimal mixing, use room temperature eggs and cream cheese. Don’t overmix your egg mixture to avoid a dense casserole.
