- 3 day-old everything bagels, cut into quarters
- 1 bell pepper, diced
- 3/4 cup quartered cherry tomatoes
- 6 slices of cooked bacon, crumbled
- 9 large eggs
- 1 and 1/2 cups whole milk
- 1 and 1/2 cups shredded cheese
- 1/2 teaspoon ground mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 6 ounces full-fat cream cheese, softened
Instructions
- Layer half of the bagel pieces in a greased baking dish. Add half of the diced bell pepper, cherry tomatoes, and crumbled bacon.
- In a bowl, whisk together the eggs, milk, shredded cheese, mustard, salt, and pepper until smooth.
- Pour the egg mixture evenly over the layered ingredients in the baking dish.
- Add a layer of cream cheese on top, and sprinkle with everything bagel seasoning.
- Repeat the layering process with the remaining ingredients.
- Cover and refrigerate overnight or bake immediately at 375°F (191°C) for 40-50 minutes until set and golden.
Notes
For optimal mixing, use room temperature eggs and cream cheese. Don’t overmix your egg mixture to avoid a dense casserole.
