Apple Cider Pork with Mashed Sweet Potatoes

A comforting dish combining juicy pork tenderloin with a rich apple cider sauce, served alongside creamy mashed sweet potatoes.

Ingredients

  • 1.5 pounds pork tenderloin, trimmed and cut into medallions
  • 1 cup apple cider
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme, fresh or dried
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon cornstarch (optional)
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons butter (for mashed sweet potatoes)
  • 1/4 cup heavy cream or milk
  • Salt to taste (for mashed sweet potatoes)
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. In a bowl, combine apple cider, sliced onion, minced garlic, thyme, salt, and pepper. Add pork medallions and marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Remove pork from marinade and sear in the skillet until browned, about 3-4 minutes per side.
  3. Add the marinade to the skillet and simmer until the pork is cooked through and the sauce thickens, about 10-15 minutes. If desired, mix cornstarch with a little water and add to the sauce to thicken further.
  4. Meanwhile, boil sweet potatoes in a pot of water until tender, about 15-20 minutes. Drain and return to the pot.
  5. Add butter, heavy cream or milk, salt, and cinnamon (if using) to the sweet potatoes. Mash until smooth and creamy.
  6. Serve the pork with the mashed sweet potatoes on the side.

Notes

Marinate the pork for at least 30 minutes for enhanced flavor. This dish pairs well with a green salad or steamed vegetables.
