Ingredients

- 1.5 pounds pork tenderloin, trimmed and cut into medallions
- 1 cup apple cider
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme, fresh or dried
- Salt to taste
- Pepper to taste
- 1 tablespoon butter
- 1 tablespoon cornstarch (optional)
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons butter (for mashed sweet potatoes)
- 1/4 cup heavy cream or milk
- Salt to taste (for mashed sweet potatoes)
- 1/4 teaspoon cinnamon (optional)
Instructions
- In a bowl, combine apple cider, sliced onion, minced garlic, thyme, salt, and pepper. Add pork medallions and marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Remove pork from marinade and sear in the skillet until browned, about 3-4 minutes per side.
- Add the marinade to the skillet and simmer until the pork is cooked through and the sauce thickens, about 10-15 minutes. If desired, mix cornstarch with a little water and add to the sauce to thicken further.
- Meanwhile, boil sweet potatoes in a pot of water until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter, heavy cream or milk, salt, and cinnamon (if using) to the sweet potatoes. Mash until smooth and creamy.
- Serve the pork with the mashed sweet potatoes on the side.
Notes
Marinate the pork for at least 30 minutes for enhanced flavor. This dish pairs well with a green salad or steamed vegetables.
