Easy Potato Soup

A comforting and simple potato soup perfect for using leftover potatoes.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 large onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, shredded cheese, bacon bits

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sauté until soft, about 5 minutes.
  3. Add the diced potatoes and broth. Bring to a boil.
  4. Reduce the heat and let it simmer for 15-20 minutes or until the potatoes are tender.
  5. Use a potato masher or an immersion blender to blend the soup to your desired consistency.
  6. Stir in the milk or cream and season with salt and pepper. Heat through.
  7. Serve hot with your favorite toppings.

For a creamier texture, opt for whole milk or cream. You can customize with various toppings or add vegetables for extra flavor.
